Bowl of Life: Kurobuta Tonkotsu Ramen

A Japanese culinary staple is a decadent American dining experience at Strings Ramen. Madison’s boutique installment welcomed its first guests this January and is the fourth brick-and-mortar expansion since the original Strings 2014 debut in Chicago’s Chinatown district. Head chef Katie Dong insists their cult-like following comes down to the pro execution of each bowl they create. “The word ‘umami’ means unexplainable flavor in Japan,” she says. “The aroma, texture and flavors of our ramen dishes co-mingle to just go ‘BOOM’ in your mouth.”
