Native Dishes: Traditional Plant-Based Foods with Juan Umaña

Join Team Deliciouser for a meaningful workshop centered on the traditional plant-based foods of Indigenous North America. Led by Chef Juan Umaña, this experience explores local and foraged ingredients native to the Americas and the regions, seasons, and cultures they come from.
Drawing inspiration from Sean Sherman’s Turtle Island: Foods and Traditions of the Indigenous Peoples of North America, Juan will guide you through dishes rooted in Indigenous foodways—recipes shaped by the land, guided by sustainability, and deeply connected to community and tradition. Many Indigenous cuisines have long embraced plant-forward cooking that works in harmony with the environment, honoring what the land provides in each season.
Throughout the workshop, we’ll focus on the full-circle relationship between food, land, and people—highlighting ingredients, techniques, and stories that have been passed down for generations. Guests will learn about the cultural significance of each dish, and leave with a deeper appreciation for Indigenous culinary heritage.
As always, you’ll enjoy a welcoming, intimate atmosphere, a tour of The Deliciouser space, and a chance to connect through food that tells a story.
