Irish Coffee Brownies (the easy way) with chocolate-coffee or mint-chocolate frosting
1 box of your favorite brownie mix Eggs and oil as specified on box (substitute Irish whiskey for water)
Bake according to the box instructions, then cool and top with the following delicious frosting.
Chocolate-coffee or mint chocolate frosting 6 oz. dark chocolate (60 percent cocoa or stronger), finely diced 3 oz. heavy cream 1 Tbsp. instant coffee granules or 2 tsp. mint flavoring
Heat cream in a small saucepan. As cream begins to form bubbles on the edges, remove from heat and add chocolate and coffee granules (or the mint flavoring) and stir until melted.
If chocolate doesn’t completely dissolve, put back on the heat momentarily to get it warm enough so it will all melt. Take care not to scorch the cream.
Spread atop cooled brownies and let sit to form a solid frosting, or wait and pour the warm frosting over sliced brownies for a luscious sauce. Enjoy!
