Sloppy Joe and Beans "Pie"

Serves 8.  
It’s not really a pie. It’s not a casserole either. It’s really yummy though. Perfect comfort food for a recession — or anytime.  

1 tsp. of vegetable oil
1.5 lbs. of ground beef
½ green pepper, diced
½ medium white or yellow onion, diced
1 15-oz. can sloppy joe sauce
1 15-oz. can of chili hot beans
2 cans refrigerated crescent roll (large ones work best)
1 c. shredded cheddar cheese
A sprinkle of sesame or poppy seeds (optional)


Preheat oven to 350.  

In medium sauté pan, brown ground beef in oil. When beef is half-way browned, add onion and green pepper. Continue sautéing until meat is browned through.  

Add the sloppy joe sauce and the beans. Stir until heated through.

While this is heating, get out an 11 x 13 pan. Open one can of crescent roll dough and gently unroll it into the bottom of pan to form the bottom crust. Pat the dough and stretch it a bit to get it to fit in the pan and come partially up the sides, but don’t mess with the dough more than you have to. Working with it too long makes it tough.  

Pour in the heated mixture. Top with the grated cheese.

Open the other roll of crescent roll dough and place across top form a crust.

Sprinkle sesame seeds or poppy seeds on top if you want it to look like a “bun.” Bake 30–35 minutes. Let sit on the counter for a few minutes before cutting. 

We serve it with French fries and a side salad. Enjoy!
